Brocolli Salad

This is a delicious nourishing and fresh salad that pairs nicely with a simple protein choice for a complete nutrient dense meal option. Definitely one of my favourites!

INGREDIENTS

1 head of brocolli shredded finely

1/2 red onion, finely diced

1/2 to 1 red capsicum, finely diced

1/2 to 1 green capsicum, finely diced

1/2 to 1 yellow capsicum, finely diced

3 radishes, finely diced

1 -2 tablespoons of Gevity, Great Guts Mayo (or your healthy choice of creamy dressing)

Freshly ground salt & black pepper to taste

 

INSTRUCTIONS

Combine all ingredients in a large bowl and mix together well together.

Serve and enjoy!

This is a great nutrient dense flavour packed addition to any meal. Pair with your favourite protein for a well balanced meal.

This stores really well in the fridge if you only add the Mayo at the time of eating. Simply store in an airtight container in the fridge for up to 4 days, ready to grab, mix with mayo and eat 🥦
